I made these because 1. I am a vegetarian and 2. My 10 year old daughter has announced she is also.
1 can black beans, un-drained
1/2 cup white rice or brown
1/2 cup bread crumbs
salt/pepper/garlic to taste
dash chili powder
1/2 can olives shredded. I like using the salad shooter to shred
1 carrot shredded
This is a fun recipe as you can anything you want. Any vegetable, any herb. Possibilities are endless. You can make them as big or as small as you want.
Cook black beans on Medium on stove for about 10 minutes. Add everything, blend using spoon. Cook on grill. I like to sprinkle olive oil around them to make them a little crisp. Then freeze.
